Yellow Lentil Vegan Beyond Burger

Ingredients

  • 2 pretzel buns
  • 2 Beyond Burger® patties
  • 4 tbsp. Lantana® Yellow Lentil Hummus
  • 1 avocado
  • 1 tomato
  • 1 cup lettuce
  • 2 sweet potatoes
  • Olive Oil
  • Salt
  • Pepper
  • Paprika

Directions

  • Preheat oven to 450 degrees. Wash and slice lettuce, tomato, and avocado and set aside. Wash and slice sweet potatoes into desired fry shape and size.
  • Toss sweet potato slices with olive oil and salt to taste – we like to add a little paprika, too! Spread out the oil coated slices on a parchment lined baking sheet making sure not to overcrowd them. Bake for 20 minutes or until brown on the outside and soft on the inside, turning halfway through.
  • While the fries bake, heat a pan with oil on medium heat. Season the Beyond Burger® patties as desired with salt and pepper then cook for 3 minutes per side. *Note: interior of product should still be red or pink when fully cooked, do not overcook.
  • Slice your pretzel buns and toast until slightly crisp and warm. Slather each bun half with 1 tbsp. of Lantana® Yellow Lentil hummus.
  • Add your cooked patty, lettuce, tomato, and 1 half of avocado to each burger. Serve with sweet potato fries and 2 tbsp. of Lantana® Yellow Lentil hummus on the side.
