Sriracha Carrot TTLA Sandwich

2 ciabatta rolls
6 tbsp. Lantana® Sriracha Carrot Hummus
1 avocado
1 tomato
1.5 cups Lettuce
Lightlife® Organic Fakin’ Bacon Tempeh Strips*

*DIY Tempeh Strips:
1 package of tempeh (about 8 oz)
1 tbsp. soy sauce
1tbsp. extra virgin olive oil
1 tbsp. maple syrup
2 tsp. liquid smoke
½ tsp. ground cumin


Wash and slice your lettuce, tomato, and avocado and set aside. If using packaged tempeh bacon, heat in olive oil on stovetop until crisp, or follow package instructions and skip to step 3.
If making your tempeh bacon at home, cut into thin strips and mix together the marinade ingredients in a bowl. While soaking tempeh strips in marinade for 2 minutes, heat some oil in a pan. When it’s hot enough, add the marinated tempeh strips and cook 1-2 minutes on each side or until crisp.
Lay cooked tempeh bacon on a paper towel to cool while you cut and toast your ciabatta bun.
Once lightly toasted, spread 1 tbsp. of Lantana® Sriracha Carrot hummus on each bun half and layer in the prepped tomato slices, lettuce, and half of an avocado per sandwich.
Top with your freshly made tempeh bacon and serve with potato chips and a side of the remaining Lantana® Sriracha Carrot hummus for dipping. Enjoy!
