Yellow Lentil Vegan Beyond Burger

2 pretzel buns
2 Beyond Burger® patties
4 tbsp. Lantana® Yellow Lentil Hummus
1 avocado
1 tomato
1 cup lettuce
2 sweet potatoes
Olive Oil


Preheat oven to 450 degrees. Wash and slice lettuce, tomato, and avocado and set aside. Wash and slice sweet potatoes into desired fry shape and size.
Toss sweet potato slices with olive oil and salt to taste – we like to add a little paprika, too! Spread out the oil coated slices on a parchment lined baking sheet making sure not to overcrowd them. Bake for 20 minutes or until brown on the outside and soft on the inside, turning halfway through.
While the fries bake, heat a pan with oil on medium heat. Season the Beyond Burger® patties as desired with salt and pepper then cook for 3 minutes per side. *Note: interior of product should still be red or pink when fully cooked, do not overcook.
Slice your pretzel buns and toast until slightly crisp and warm. Slather each bun half with 1 tbsp. of Lantana® Yellow Lentil hummus.
Add your cooked patty, lettuce, tomato, and 1 half of avocado to each burger. Serve with sweet potato fries and 2 tbsp. of Lantana® Yellow Lentil hummus on the side.
